We buy the fruit fresh here and dry it here. Nobody dried it a year ago in another country.

Our story
In the spring of 2024 my father sat in a clinic in Abu Dhabi and was told, politely, that his blood sugar had been climbing for three years and nobody had thought to mention it.
We went home and did what everyone does. We emptied the cupboard. What we found was almost funny. The “healthy” dried mango had more added sugar per gram than the chocolate sitting next to it. The apricots were the colour of a traffic cone, because of sulphur dioxide. The pack that said no added sugar on the front listed glucose syrup third on the back.
Fruit is already sweet. Somebody had decided that wasn’t enough.
So we bought a small dehydrator, put it on the kitchen counter, and started slicing. Mangoes from Mina Zayed on Saturday mornings. Apples, kiwi, oranges. Fourteen hours at fifty-seven degrees. No sugar, no sulphur, no oil, no flavouring.
The first batch was for my father. The second was for the neighbours, who had knocked to ask what the smell was. By the fourth we had run out of jars.
In Arabic, خير is the goodness you wish on someone — not the kind you buy. It seemed like the right thing to call it.

How we dry
Whole fruit from Mina Zayed, ripe enough to be sweet on its own. Never concentrate, never offcuts.
By hand, to an even four millimetres. Uneven slices dry unevenly, and unevenly dried fruit spoils.
Fourteen hours at 57°C. Low enough that nothing cooks. Long enough that nothing survives.
Into a resealable food-grade pouch within the hour, while it is still warm from the tray.


We dry to order, in small batches. Nothing sits in a warehouse waiting for you to want it.
Delivery
We deliver across Abu Dhabi and nowhere else — that is rather the point. Order before 4pm and it goes out on the next run.

Questions
Nothing. No sugar, no glucose syrup, no sulphur dioxide, no oil, no natural flavouring, no preservative. Every pouch lists one ingredient, and it is the fruit named on the front. If that ever changes, we will say so here first.
Because it has not been treated with sulphur dioxide. SO₂ is what keeps commercial apricots orange and commercial mango neon. It is legal and it is common, and it is also the most frequent trigger for the wheezing and headaches some people get from dried fruit. Ours browns the way a cut apple browns. That is the fruit, not a fault.
Nine months sealed, kept out of direct sun. Once opened, press the air out and reseal — three to four weeks at room temperature, longer in the fridge. There is no preservative doing that work, so the pouch matters.
Yes. There is nothing in it but fruit, and nothing touches it but stainless steel and a drying tray. No alcohol is used at any stage, including cleaning.
Dried fruit is concentrated fruit — taking the water out concentrates the natural sugar along with the fibre. We add none, but a 30g portion still carries the sugar of the whole fresh fruit. Please treat it as fruit rather than as a sugar-free product, and speak to your doctor.
